Roasted Red Potatoes

Ingredients

1 pound baby red potatoes 2 tablespoons extra virgin olive oil 1 ½ teaspoons sea salt ground black pepper, to taste

Instructions

1. Preheat oven to 375F. Cut potatoes into quarters.

2. In a roasting pan, toss potatoes with oil and season with sea salt and pepper.

3. Spread the potatoes evenly in the pan and roast for about 20 minutes.

4. Turn the potatoes and bake for an additional 15 minutes.

5. Remove from oven and serve.
