Roasted Tomatoes and Shrimp

Ingredients

5 large tomatoes 3 tablespoons extra virgin olive oil 1 tablespoon minced garlic sea salt, to taste ground black pepper, to taste 1 pound shrimp 4 teaspoons dried parsley 2 tablespoons lemon juice

Instructions

1. Preheat oven to 450F. Slice tomatoes into eighths; remove and discard seeds and juice.

2. Place tomatoes in a large baking dish. Top with olive oil and garlic and season generously with sea salt and pepper.

3. Roast on top rack of oven for 20 minutes.

4. Meanwhile, peel and devein the shrimp.

5. Remove baking dish from oven and stir in the shrimp, parsley, and lemon juice.

6. Return the dish to oven until the shrimp are cooked through, 10-15 minutes. Serve immediately.
