Root Vegetable Latkes

Ingredients

2 pounds root vegetables 1 onion 4 eggs ¾ teaspoon sea salt, plus more to taste 4 tablespoons coconut flour 2 cups avocado oil, for frying (depending on the size of your pan - you need about a quarter inch of oil in the bottom)

Instructions

1. Peel thick skinned root veggies (like Kohlrabi) and onion; grate the root veggies and onion in a food processor using the grater attachment.

2. Place grated veggies in a clean flour sack towel and squeeze all excess liquid out and discard liquid.

3. In a large bowl, mix veggies with eggs, sea salt and coconut flour.

4. Fry in avocado oil until brown on both sides. Drain on a paper bag and keep warm in a warm oven.
