Rosemary Grilled Lamb Chops

Ingredients

¼ cup extra virgin olive oil 2 teaspoons sea salt ⅛ teaspoon cayenne pepper 4 teaspoons dried rosemary 1 tablespoon minced garlic 8 lamb chops, about ¾-inches thick

Instructions

1. In a food processor fitted with the s-blade add the oil, salt, pepper, rosemary, and garlic and pulse until well combined.

2. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator.

3. Remove lamb chops from refrigerator and allow to come to room temperature, about 20 minutes.

4. Lamb chops can be cooked on the grill or the stovetop. If using the grill, preheat to high. If using the stovetop, heat a heavy bottomed pan over medium-high heat.

5. Add lamb chops to grill or pan and sear for about 2 minutes. Flip and cook another 3 minutes for medium-rare or 3 1/2 minutes for medium.

6. Make sure lamb is cooked through until an internal temperature of 145F is reached when using either cooking method.

7. Allow to rest for 5 minutes before serving.
