Seasoned Black Beans

Ingredients

1 jalapeño pepper ½ onion 2 tablespoons extra virgin olive oil, or butter 2 teaspoons minced garlic 1 teaspoon cumin ¼ teaspoon chili powder ¾ teaspoon sea salt, plus more to taste ½ cup vegetable broth, or filtered water 2 cups cooked black beans

Instructions

1. Mince and remove the seeds of the jalapeño. Peel and dice the onion.

2. Add the oil or butter to a large saucepan over medium high heat. Add the onion and garlic with the cumin, chili powder, and sea salt and sauté until the onions are softened.

3. Add the vegetable broth and stir to incorporate any brown bits from the bottom of the pan into the broth.

4. Add the beans, bring to a simmer, and then reduce heat for 10-15 minutes until the liquid is mostly evaporated. Add more salt to your taste and serve.
