Sesame Stir-Fry Scrambled Eggs

Ingredients

2 tablespoons cilantro, optional 9 eggs ground black pepper, to taste 2 tablespoons coconut aminos 4 teaspoons sesame oil 2 tablespoons water sea salt, to taste 2 ½ cups stir-fry vegetables 1 teaspoon black sesame seeds

Instructions

1. Chop cilantro. Separate 1/3 of the eggs and refrigerate yolks for another use.

2. Whisk eggs and egg whites together in a bowl. Season with pepper and coconut aminos.

3. Heat 1/2 of the sesame oil in a pan over medium-low heat. Add the stir-fry veggies and water.

4. Season with salt and pepper and cook for 4-5 minutes until tender. Transfer onto a plate.

5. Add remaining sesame oil to the pan. Add egg mixture to a pan and swirl to coat the base. Cook without stirring for 30 seconds.

6. Using a wooden spoon, push the set eggs to the outer edge and the raw eggs to the center.

7. Gently push the eggs around the pan every 15 seconds until set. Sprinkle with sesame seeds.

8. Remove from heat and serve with prepared vegetables. Top with cilantro and additional sesame seeds.
