Shredded Beef Chili

Ingredients

1 onion 2 red bell peppers 1 tablespoon extra virgin olive oil 1 teaspoon sea salt, to taste 2 teaspoons minced garlic 1 teaspoon dried oregano ½ teaspoon cumin 1 tablespoon chili powder ¼ teaspoon ground allspice ½ teaspoon cinnamon 1 pound shredded beef 14 ounces diced tomatoes 2 ounces tomato paste 2 cups beef broth, or chicken broth

Instructions

1. Peel and chop onion. Chop peppers.

2. Heat oil in a large stockpot. Add onions and salt and sauté until onions are translucent.

3. Add garlic, spices, and bell peppers and sauté until peppers are softened.

4. Add shredded beef to the stockpot and break up finely with a wooden spoon.

5. Add tomatoes, tomato paste, and broth. Adjust seasoning to your preference.

6. Chili can be served immediately, or allowed to simmer for several hours to combine the flavors.
