Shredded Beef Taco Lettuce Cups

Ingredients

1 onion 2 bell peppers 1 head romaine 1 pound shredded beef 2 tablespoons extra virgin olive oil taco seasoning, to taste 1 cup salsa, to taste 1 cup guacamole, to taste

Instructions

1. Peel and slice onion. Slice bell peppers. Separate lettuce leaves. Shred the beef.

2. Heat oil in a skillet over medium-high heat. Add onion and bell peppers and cook until caramelized to your preference.

3. Add beef to the pan. Generously sprinkle with taco seasoning to taste.

4. Fill each leaf with seasoned beef and veggies, salsa, and guacamole.
