Shrimp Scampi

Ingredients

1 ½ pounds jumbo shrimp 2 lemons 4 tablespoons fresh parsley 1 ½ teaspoons sea salt, plus more to taste ¼ teaspoon ground black pepper, plus more to taste 9 tablespoons extra virgin olive oil 1 tablespoon minced garlic ¼ cup white wine

Instructions

1. Peel and devein the shrimp, leaving the tails on. Juice and zest half the lemons and cut the other into wedges for garnish. Chop parsley.

2. Sprinkle shrimp with salt and pepper.

3. In a large pan, melt one third of the oil over medium high heat.

4. When the oil is shimmering, add half the shrimp and cook, turning occasionally until completely opaque - about 3 minutes.

5. Transfer to a plate and place in a warm oven. Cook the second half of the shrimp and add that to the oven plate.

6. Lower the heat and add another third of the oil and garlic, stirring frequently for about 2 minutes to allow the flavor of the garlic to release.

7. Add wine, lemon zest, and the lemon juice. Turn up heat to high and allow to simmer until the liquid is reduced to half.

8. Turn down heat, and add remaining oil, 1 tablespoon at a time.

9. Return shrimp to sauce and combine well. Turn off heat; season with salt and pepper and garnish with parsley and lemon wedges.

10. Serve.
