Simple Salad with Green Chile Cilantro Dressing

Ingredients

For the dressing: 2 limes ½ bunch cilantro 1 avocado 4 ounces diced green chiles ½ teaspoon salt ½ teaspoon minced garlic ½ cup extra virgin olive oil 1 tablespoon water, more as needed For the salad: ½ red onion ½ small jicama 8 ounces baby salad greens ½ cup pepitas sea salt, to taste ground black pepper, to taste

Instructions

1. For the dressing: Zest half of the limes and juice all limes. Trim ends of cilantro and coarsely chop, stems and all. Peel and pit avocado.

2. Place all dressing ingredients, except olive oil and water, into bowl of a food processor. You may also use a blender. Process on high for 30 seconds, or until blended.

3. With processor still running, slowly drizzle in olive oil until incorporated.

4. Add water, 1 tablespoon at a time, until desired consistency is reached. Taste and adjust salt, if needed. Set aside.

5. For the salad: Peel and thinly slice onion. Peel jicama and cut into bite-sized cubes.

6. Place salad greens in a large bowl. Add onion, jicama, and pepitas. Toss to combine.

7. Pour dressing over salad and toss, or divide salad among plates and serve with dressing on the side. Enjoy.
