Skillet Tri-Tip Steak

Ingredients

1 tablespoon fresh rosemary 2 tablespoons extra virgin olive oil 2 teaspoons sea salt 1 teaspoon ground black pepper 2 teaspoons garlic powder 2 pounds tri-tip, approximately 1 inch thick

Instructions

1. Heat olive oil in a large cast-iron or other heavy-duty skillet over medium-high heat.

2. Finely chop fresh rosemary.

3. Combine salt, pepper, garlic powder, and rosemary in a small bowl. Rub the salt mixture on all sides of the steak and place in the hot skillet.

4. Sear steak on both sides, approximately 2 minutes per side.

5. Reduce heat to medium and continue cooking for another 6-8 minutes, turning once. This will yield medium-rare to medium steaks (internal temperature of 145F - 160F).

6. Cook for another 2-3 minutes for more well done steaks. For thinner steaks, reduce cooking time by 3-5 minutes.

7. Remove steaks from skillet and cover loosely . Rest for 5-10 minutes before serving. To serve, cut steaks in thin slices against the grain for more tender results.
