Slow Cooker BBQ Chicken

Ingredients

½ onion 2 tablespoons minced garlic 1 cup chicken broth ½ cup apple cider vinegar ⅔ cup molasses ⅛ teaspoon ground allspice 2 teaspoons celery salt 1 cup tomato paste ¼ cup Dijon mustard ½ teaspoon horseradish 3 pounds whole chicken

Instructions

1. Preheat slow cooker to high.

2. Peel and finely dice the onion.

3. Combine all ingredients except for chicken in slow cooker and mix well.

4. Part the chicken. Remove and discard skin.

5. Place the chicken in the slow cooker and turn to low, spooning sauce atop chicken to coat.

6. Cover and cook on low for 4-6 hours or until the chicken is very tender.

7. The chicken is cooked through when a meat thermometer inserted into the thickest part of the breast reads 165F.

8. With a slotted spoon transfer chicken to a serving dish, remove bones and discard.

9. Spoon sauce (you may not use it all) over chicken and serve. Save extra sauce to use as a tasty condiment.
