Slow Cooker Lucky Pork and Sauerkraut

Ingredients

2 pounds pork butt roast, or pork shoulder 2 tablespoons juniper berries ½ cup white wine 2 teaspoons minced garlic 2 teaspoons sea salt 1 cup chicken broth 1 quart sauerkraut, from white cabbage

Instructions

1. Rinse the roast and pat dry with paper towels. Crush juniper berries.

2. Mix wine, juniper berries, garlic, and sea salt.

3. Pour over roast, cover, and refrigerate for at least 3 hours or overnight.

4. Remove roast from marinade and pat dry. Sear all sides of roast in a hot pan (fat side first) until browned.

5. Place roast into slow cooker with marinade and broth. Cook for 8 hours on low or until meat begins to falls apart.

6. Add sauerkraut and cook until well mingled, another hour or 2 on low.
