Slow Cooker Lucky Pork and Sauerkraut with Cauliflower Mash

Ingredients

For the pork: 2 pounds pork butt roast, or shoulder 2 tablespoons juniper berries 2 teaspoons minced garlic 2 teaspoons sea salt 2 cups chicken broth ¼ cup extra virgin olive oil 1 quart sauerkraut, from white cabbage For the cauliflower mash: 1 head cauliflower 6 tablespoons extra virgin olive oil ¾ teaspoon sea salt, plus more to taste ground black pepper, to taste

Instructions

1. For the pork: Rinse the roast and pat dry with paper towels. Crush juniper berries.

2. Mix juniper berries, garlic, salt, and 1/3 of the chicken broth together.

3. Pour over roast, cover, and refrigerate for at least 3 hours or overnight.

4. Remove roast from marinade and pat dry.

5. Heat olive oil in a large skillet. Add pork and sear all sides of the roast (fat side first) until browned.

6. Place roast into slow cooker with marinade and remaining broth. Cook for 8 hours on low or until meat begins to falls apart.

7. Add sauerkraut and cook until well mingled, another 1-2 hours on low.

8. For the cauliflower mash: Meanwhile, break cauliflower into florets.

9. Add cauliflower florets to a large sauce pan and fill halfway with filtered water. Cover and steam until florets are soft; strain and discard water.

10. Add cauliflower to your food processor and process in small batches until very smooth. Add plenty of olive oil plus salt and pepper to taste.

11. Serve lucky pork and sauerkraut alongside cauliflower mash.
