Slow Cooker Polenta

Ingredients

5 tablespoons extra virgin olive oil 1 onion 2 teaspoons minced garlic 4 cups chicken broth 1 cup cornmeal sea salt, to taste ground black pepper, to taste refined coconut oil, for frying

Instructions

1. Grease the walls of the slow cooker with 1 tablespoon (per 4 servings) of the olive oil.

2. Peel and chop the onion.

3. Measure remaining ingredients, except salt and pepper; add to slow cooker with the remaining oil.

4. Stir well; cover and cook on low for 6 -9 hours (3 -4 hours on high), stirring occasionally. Season with salt and pepper to taste and stir.

5. Transfer polenta mixture to a greased loaf pan. Chill thoroughly, then cut into 1/4 inch slices and fry in coconut oil until browned.
