Slow Cooker Refried Beans

Ingredients

2 cups dried black beans 2 tablespoons lemon juice 6 cloves garlic ¾ cup bacon fat, or olive oil ¾ teaspoon sea salt, plus more to taste

Instructions

1. In a large mixing bowl, cover beans with water with at least an inch or two of coverage. Add lemon juice and soak for at least 8 hours in a warm spot of your kitchen.

2. Before cooking, drain beans and rinse well.

3. Peel and mash garlic.

4. Place in a slow cooker with garlic and cover with filtered water.

5. Cook on low for 8 hours or until beans are soft.

6. Melt the fat if using bacon fat.

7. Drain beans and set cooking liquid aside.

8. Add extra virgin olive oil or melted bacon fat to beans and use a potato masher to mash beans and fat until smooth and well-combined.

9. Add in some cooking liquid if you would like thinner beans. Season with sea salt to taste.
