Slow Cooker Stuffed Pepper Soup

Ingredients

1 onion 3 bell peppers 2 teaspoons minced garlic 1 teaspoon sea salt, plus more to taste ½ teaspoon ground black pepper, plus more to taste 3 tablespoons extra virgin olive oil 1 pound ground beef 28 ounces diced tomatoes 6 ounces tomato paste 3 cups chicken broth 1 teaspoon dried basil 1 pinch cayenne pepper

Instructions

1. Peel and chop onion. Remove seed and pith from bell peppers and dice.

2. In a large skillet, cook onion, garlic, sea salt, fresh ground black pepper, and olive oil until onion begins to soften. Add beef and continue cooking until browned.

3. Add canned tomatoes, tomato paste, broth, bell peppers, and seasonings to slow cooker.

4. Stir in meat mixture from pan until well incorporated, and then cover. Cook on high for 3-4 hours.

5. Before serving, add salt and pepper to your taste.
