Slow Cooker Vegetable Broth

Ingredients

3 carrots 2 onions ½ head cauliflower 2 tomatoes 4 stalks celery 2 tablespoons minced garlic 1 bunch fresh thyme ¾ teaspoon sea salt 1 teaspoon ground black pepper 8 cups water, as needed

Instructions

1. Peel carrots and onions. Chop vegetables into quarter size pieces.

2. Add all ingredients to the slow cooker and cover with water, making sure all the vegetables are submerged.

3. Set on low for 8-10 hours.

4. Strain ingredients from liquid.

5. Refrigerate or freeze broth. Broth will stay good in the refrigerator for up to 3 days.
