Soba Noodle Salad with Pork

Ingredients

6 ounces soba noodles 1 carrot 1 red bell pepper 3 green onions 3 tablespoons hoisin sauce 1 tablespoon lime juice 1 tablespoon extra virgin olive oil 1 pound shredded pork 1 tablespoon toasted sesame seeds red pepper flakes, optional

Instructions

1. In a large pot of boiling salted water, cook noodles according to package instructions and drain.

2. Peel and shred the carrot. Remove seeds and pith from bell pepper and cut into paper-thin strips. Mince green onions.

3. In a large bowl whisk together hoisin, lime juice, and olive oil.

4. Add noodles, carrots, bell pepper, green onions, and shredded pork. Toss well.

5. Serve at room temperature or chilled; garnish with sesame seeds and red pepper flakes.
