Spanakopita Inspired Tofu Scramble

Ingredients

24 ounces firm tofu 6 green onions 3 tablespoons extra virgin olive oil 9 ounces spinach 1 ½ teaspoons dried dill sea salt, to taste ground black pepper, to taste

Instructions

1. Drain and press tofu. Slice green onions. Set a small amount aside for garnish, if desired.

2. Heat olive oil in a skillet over medium heat.

3. Add green onions and cook for 2 minutes. Add spinach and allow to cook and wilt down.

4. Once spinach has cooked down, crumble in tofu. Add dill, salt, and pepper. Stir to combine.

5. Cook to desired doneness.

6. Season with salt and pepper. to taste. Sprinkle with reserved green onions, if desired, and serve immediately.
