Spanish Rice

Ingredients

1 cup white rice 1 ½ cups chicken broth, or beef broth ½ large onion ½ bunch cilantro 1 lime, optional 2 tablespoons extra virgin olive oil ⅓ teaspoon sea salt, plus more to taste 4 teaspoons minced garlic 4 ounces tomato paste 1 tablespoon cumin 1 tablespoon lime juice

Instructions

1. Cook rice in broth until light and fluffy.

2. Peel and mince onion. Mince cilantro. Slice lime into wedges.

3. In a large pan, cook onions in olive oil with sea salt until translucent. Add garlic, tomato paste, and cumin. Cook for one minute.

4. Stir in cooked rice, lime juice, and cilantro. Mix until well combined and season with salt to taste. Top with lime wedges and serve.
