Spiced Pear and Toasted Walnut Yogurt

Ingredients

4 pears, firm 1 cup walnuts 2 tablespoons extra virgin olive oil 2 teaspoons cinnamon ½ teaspoon cardamom ½ teaspoon ground ginger ¼ teaspoon sea salt 1 teaspoon vanilla 4 cups coconut milk yogurt 2 tablespoons honey, plus more for drizzling

Instructions

1. Core pears and cut into chunks. Chop walnuts.

2. Heat a medium-sized skillet over medium heat. Add walnuts to dry pan.

3. Toast for 5-8 minutes until walnuts are fragrant and just starting to brown. Watch carefully because they will burn quickly. Remove from skillet and set aside.

4. Heat olive oil in skillet over medium-high heat. Add pears and cook, stirring occasionally, for 10-12 minutes. Pears are done when they are tender and have some browning.

5. Drain any excess liquid from pears and place in a bowl.

6. Add cinnamon, cardamom, ginger, salt, and vanilla to pears. Stir to combine. Let cool to slightly warm or room temperature.

7. Place yogurt in a mixing bowl, add honey, and stir. Taste and adjust sweetness to your liking.

8. Divide yogurt among serving bowls, top each with pears and walnuts. Drizzle additional honey over top of each bowl, if desired. Enjoy!
