Spicy Sausage and Butternut Squash Breakfast Skillet

Ingredients

1 ½ onions 1 ½ jalapeño peppers 1 small butternut squash 3 tablespoons extra virgin olive oil 1 tablespoon minced garlic 1 ½ teaspoons paprika 1 teaspoon cumin 1 ½ teaspoons sea salt, to taste 1 teaspoon ground black pepper 1 ½ pounds breakfast sausage ⅛ teaspoon nutmeg ⅛ teaspoon cinnamon

Instructions

1. Peel and dice onion. De-seed and mince jalapeño pepper. Peel, de-seed, and dice squash into small 1/2 inch cubes.

2. Heat oil in a sauté pan over medium heat.

3. Add onion and jalapeño pepper and cook for 5 minutes, or until onion begins to soften.

4. Add garlic, paprika, cumin, salt, pepper, and butternut squash and mix well. Cover skillet and cook for 3 minutes.

5. Make a well in the center of the squash mixture and add ground sausage. Break sausage up with a spatula as it cooks.

6. Once sausage is mostly browned, stir to combine squash and sausage.

7. Cover with a lid and reduce heat to medium-low. Cook for 5-10 minutes, or until the butternut squash is cooked through.

8. Remove lid and add cinnamon and nutmeg; stir to combine.
