Spinach and Chorizo Sweet Potato Hash

Ingredients

3 sweet potatoes 1 teaspoon garlic powder 1 teaspoon dried oregano 1 teaspoon dried rosemary 1 teaspoon sea salt, plus more to taste 4 tablespoons extra virgin olive oil 16 ounces vegan chorizo 15 ounces spinach 2 avocados

Instructions

1. Preheat the oven to 400F and line a baking tray.

2. Peel and cube the sweet potatoes.

3. In a large bowl, toss the sweet potato cubes with seasonings and half of the olive oil. Add salt to taste.

4. Spread the cubes out on the lined baking tray in a single layer: bake for 20 - 25 minutes, or until a fork can pierce a potato cube easily but firmly.

5. Remove the tray of potatoes from the oven and set aside on a cooling rack.

6. In a large skillet, heat remaining olive oil over medium heat.

7. Fry potatoes in single layer (do multiple batches if necessary) for 5-8 minutes, tossing occasionally to brown on all sides and be done to your desired level of crispiness.

8. At the end, crumble in chorizo and cook until warmed through. Add the spinach and cook until it is just wilted. Slice avocado and serve alongside hash.
