Spinach, Ham and Sweet Potato Hash

Ingredients

3 sweet potatoes 1 teaspoon garlic powder 1 teaspoon dried oregano 1 teaspoon dried rosemary ¾ teaspoon sea salt, plus more to taste 4 tablespoons extra virgin olive oil 1 pound cooked ham 15 ounces spinach

Instructions

1. Preheat the oven to 400F and line a baking tray.

2. Peel and cube the sweet potatoes. Melt coconut oil.

3. In a large bowl, toss the sweet potato cubes with seasonings and half of the olive oil. Add salt to taste.

4. Spread the cubes out on the lined baking tray in a single layer: bake for 20 - 25 minutes, or until a fork can pierce a potato cube easily but firmly.

5. Remove the tray of potatoes from the oven and set aside on a cooling rack.

6. In a large skillet, heat remaining olive oil over medium heat.

7. Fry potatoes in single layer (multiple batches if needed) for 5-8 minutes, tossing every minute or so to brown on all sides.

8. Cube the cooked ham if not already in bite-sized pieces.

9. At the end, toss in the cooked ham and cook until warm through. Add the spinach and cook until it is just wilted. Serve immediately.
