Strawberry Popsicles with Chocolate Shells

Ingredients

For the popsicles: 2 ½ cups strawberries, fresh or frozen 1 banana 1 apple 4 ounces full fat coconut milk 1 tablespoon honey For the chocolate coating: 10 ounces dark chocolate ¼ cup coconut oil

Instructions

1. For the popsicles: Defrost strawberries if frozen. Peel banana. Peel, core, and chop apple.

2. Blend fruits, coconut milk, and honey in a blender.

3. Pour mixture into popsicle molds.

4. Freeze for a minimum of four hours.

5. For the chocolate coating: If using solid chocolate, break into chunks and put in a large coffee mug or bowl with coconut oil.

6. If using chocolate chips, put as is in the mug or bowl with the oil.

7. Put mug or bowl in a saucepan with water reaching halfway up the side of the mug or bowl.

8. Heat the water almost to a boil, stirring the chocolate as the water heats it.

9. When popsicles are completely frozen, dip them in the melted chocolate and wait a minute for chocolate to cool and harden before eating.

10. Extra chocolate can be stored in the refrigerator and reheated for later dipping.
