Super Green Soup

Ingredients

¼ bunch cilantro 1 head broccoli 14 ounces cooked cannellini beans 1 tablespoon extra virgin olive oil 2 teaspoons minced garlic 2 teaspoons cumin 1 teaspoon sea salt 1 teaspoon ground black pepper 2 ½ cups vegetable broth 1 tablespoon lemon juice 7 ounces spinach 1 cup coconut cream, optional

Instructions

1. Chop cilantro leaves. Cut the broccoli into florets. Drain the beans.

2. Heat olive oil in a large pot over a medium heat. Add the garlic and cumin to the pot and season with salt and pepper. Cook for 1-2 minutes.

3. Add in the vegetable broth and the broccoli and bring to a boil. Reduce the heat and simmer gently for 10 minutes.

4. Add in the beans, lemon juice, spinach, and cilantro, and cook for a further 10 minutes. Once the soup has cooked, use a hand blender to blend until smooth and creamy.

5. Divide the soup into bowls. Serve with a drizzle of coconut cream.
