Superfood Tahini Salad

Ingredients

For the dressing: 1 lemon 4 tablespoons tahini 2 teaspoons coconut sugar, or brown sugar 4 tablespoons water ¼ teaspoon sea salt, to taste 2 teaspoons minced garlic ⅛ teaspoon cayenne pepper, to taste For the salad: 16 radishes 4 cups baby kale 1 ½ cups shredded carrots For serving: 2 cups microgreens ¼ cup sunflower seeds, optional

Instructions

1. For the dressing: Juice lemon.

2. Place dressing ingredients in a bowl and stir to combine. Taste and adjust seasonings if necessary.

3. For the salad: Thinly slice radishes.

4. Toss all of the salad ingredients in a bowl and drizzle with the tahini dressing.

5. For serving: Top with microgreens and seeds.
