Sweet and Sour Pork Stir-fry

Ingredients

2 cups basmati rice 1 ½ pounds pork loin 4 cloves garlic 8 green onions 2 tablespoons avocado oil 6 tablespoons ginger syrup ¼ cup lime juice ⅔ pound snap peas 10 ounces cherry tomatoes 20 ounces pineapple chunks

Instructions

1. Cook rice according to instructions on the packaging.

2. In the meantime, cut pork into slices. Finely chop garlic and slice green onions diagonally.

3. Heat oil in a wok on high heat, add pork, garlic, ginger syrup, and lime juice, and season with salt.

4. Stir fry for 2 minutes, then lower the heat and add in sugar snap peas. Stir fry for another 4 minutes on low heat.

5. Add in tomatoes and pineapple and stir fry for another 4 minutes, then take off the heat. Toss in green onions and mix.

6. Once rice is cooked, divide everything onto plates and serve.
