Sweet and Spicy Pork Chops

Ingredients

1 teaspoon fresh ginger ¼ cup coconut aminos 2 tablespoons honey 4 teaspoons minced garlic 1 teaspoon sesame oil 2 teaspoons sriracha 2 pounds pork chops 1 tablespoon refined coconut oil 2 teaspoons sea salt, to taste ground black pepper, to taste

Instructions

1. Preheat oven to 400F. Mince ginger.

2. Whisk together the coconut aminos, honey, garlic, ginger, sesame oil, and sriracha sauce. Pour over pork chops and let marinate for about 20 minutes.

3. Heat the coconut oil in an oven-proof skillet over medium high heat. Remove pork chops from marinade and reserve marinade for the next step.

4. For 1 inch pork chops: Sear chops in skillet for 5 minutes on one side. Flip and pour the remaining marinade over them. Cook another 5 minutes on this side.

5. For ¾ inch pork chops: Sear chops in skillet for 5 minutes on each side.

6. For ½ inch pork chops: Sear chops in skillet for 2-3 minutes on each side.

7. Transfer to a glass baking dish and bake for 15-20 minutes, until an internal temperature of 145F is reached.

8. Season with ground black pepper, to taste.
