Sweet Pea Soup

Ingredients

2 onions ½ teaspoon green peppercorns 3 tablespoons extra virgin olive oil 1 ½ teaspoons sea salt, plus more to taste 2 pounds peas, (use fresh shelled or frozen) 6 cups chicken broth ground black pepper, to taste

Instructions

1. Peel and chop the onions. Crush the green peppercorns.

2. In a 4 quart sauce pan over medium heat, warm the oil until shimmering. Sauté onions with the sea salt and crushed green peppercorns until onions are tender.

3. Add peas and broth and simmer for 10-15 minutes.

4. Using an immersion blender, puree soup until well combined.

5. If you do not have an immersion blender, use a countertop blender, but puree in small batches to avoid exploding hot soup.

6. Season with salt and pepper to taste.
