Sweet Potato and Kale Gratin (DF)

Ingredients

1 bunch kale 3 sweet potatoes 2 cups coconut cream 1 teaspoon sea salt ½ teaspoon ground black pepper ½ teaspoon nutmeg 2 tablespoons coconut oil, plus more for greasing

Instructions

1. Preheat oven to 400F. Grease a baking dish. Remove tough stems from kale and chop finely. Peel and thinly slice sweet potatoes.

2. Steam kale for about 3 minutes, or until wilted. Remove from heat and allow to cool slightly. Squeeze out excess water.

3. Place half of the sliced potatoes in the baking dish in even layers. Top with kale. Next layer remaining potatoes in the dish.

4. Whisk together coconut cream, salt, pepper, and nutmeg and pour over potatoes. Dot with coconut oil.

5. Cover baking dish with parchment then aluminum foil and bake for 35 minutes. Remove foil and parchment and bake for 30 minutes more, or until potatoes are fork tender. DO NOT SKIP TESTING THE TENDERNESS.

6. Allow to sit at least 15 minutes before serving.
