Sweet Potato "Linguine"

Ingredients

8 medium sweet potatoes, long ½ cup extra virgin olive oil

Instructions

1. Peel the sweet potatoes.

2. Slice the potatoes lengthwise as thinly as possible (a mandoline works well for this task, or you can do it with a sharp chef’s knife). Or, you can create linguini ribbons by using a vegetable peeler.

3. Cut each slice into long, thin strips 1/4 inch to 1/2 inch wide. The longer your sweet potatoes, the longer your "linguini" will be.

4. Heat oil in a large skillet over medium heat. Add the sweet potato to the oil and cook, stirring gently until tender, about 3-5 minutes.

5. Serve with your sauce of choice.
