Sweet Potato Pancakes

Ingredients

3 large sweet potatoes ΒΌ cup walnuts, or pecans 6 eggs 1 teaspoon cinnamon 1 tablespoon avocado oil 2 tablespoons pure maple syrup

Instructions

1. Peel sweet potato and cut into cubes. Chop walnuts.

2. Cook the sweet potato in a pot of boiling water for around 15 minutes. Then drain and let it cool.

3. Place the cooked potatoes in a bowl, add the eggs and cinnamon, and puree with a hand mixer until smooth.

4. Heat 1/4 of the oil in a large non-stick pan and add 3 portions of batter (around 2 heaped Tablespoons per pancake).

5. Cook the pancakes for about 3 minutes until golden brown and done. Turn halfway and repeat with the remaining batter.

6. Divide the pancakes onto plates (3 per serving), sprinkle with the chopped nuts, and drizzle with maple syrup.
