Thai Sweet Chili Sauce

Ingredients

3 cloves garlic, large 2 red jalapeño peppers ½ cup apple cider vinegar ½ cup honey ½ cup water 1 ½ teaspoons sea salt 2 tablespoons water 1 tablespoon arrowroot

Instructions

1. Peel the garlic cloves. Wearing glove to prevent burning, deseed and devein the peppers.

2. In the blender, purée together all the ingredients, except for extra water and arrowroot powder.

3. Transfer mixture to a saucepan and bring to a boil.

4. Lower heat and simmer until the mixture thickens and the garlic and red pepper bits begin to soften, about 3 minutes.

5. Combine the arrowroot and water. Whisk this mixture into the sauce and continue to simmer one more minute to allow the sauce to thicken.

6. Pour into a glass jar, and once cool, refrigerate until ready to use.
