Toasted Quinoa Salad Topper

Ingredients

⅓ cup quinoa ⅔ cup water, or broth for more nutrients ⅛ teaspoon sea salt, to taste parchment paper, optional ½ teaspoon garlic powder ½ teaspoon onion powder 1 teaspoon dried parsley

Instructions

1. Rinse the quinoa.

2. Add quinoa to a small saucepan with the water or broth and a pinch of salt.

3. Bring to a boil, then reduce heat and simmer with the lid on until the quinoa is cooked and the liquid is absorbed, about 15 minutes.

4. Spread the quinoa in a very thin layer on a parchment or silicone baking mat-covered baking sheet and let dry for at least one hour.

5. Preheat the oven to 400F.

6. Sprinkle seasoning over the quinoa and bake until crispy, about 15-20 minutes.
