1. To prepare the tofu, drain all the water, and sandwich it between two paper towels.
2. Place it on a plate and put another plate on top. Place a heavy item like a can on the top plate. Press for at least 30 minutes.
3. After tofu has been pressed, cut tofu into ½ inch cubes. Peel and grate ginger. Trim ends from broccolini. Juice orange.
4. In a bowl, mix ginger, peanut butter, coconut aminos, half of the water, all of the orange juice, sesame oil, and red pepper flakes. Stir to combine and set aside.
5. Place broccolini in a microwave-safe bowl and add remaining water.
6. Cover and cook for 4-6 minutes or until tender, set aside. Broccolini can also be placed in boiling water and boiled for 2-4 minutes, or until tender.
7. In the meantime, heat coconut oil in a pan over medium heat and cook tofu for 10-15 minutes, occasionally turning, until browned.
8. Add in prepared sauce and stir well. Remove from heat and serve with the cooked broccolini.
