Tortilla Chips

Ingredients

12 corn tortillas 3 cups refined coconut oil sea salt, to taste

Instructions

1. Using a cleaver or pizza cutter, cut tortillas into eighths.

2. Heat coconut oil in a large skillet until shimmering.

3. Add the tortillas in a single layer.

4. Place a mesh strainer above a large bowl.

5. Fry until lightly golden and crispy, and then transfer to mesh strainer. (Think fast food French fry draining!)

6. Continue frying in batches taking care to avoid spatter from the hot oil.

7. Sprinkle with sea salt and serve.
