Traditional Guacamole

Ingredients

½ yellow onion 4 avocados 3 limes 1 tomato ½ bunch cilantro 1 ½ teaspoons sea salt, plus more to taste

Instructions

1. Peel and finely dice onion. Peel, pit, and mash avocados in a medium bowl. Set pits aside.

2. Create a small well in the mashed avocado and add the onion.

3. Juice 2/3 of the limes over the onion and let sit for 10 minutes to soften and mellow the onion.

4. Meanwhile, deseed and finely chop tomato. Mince cilantro.

5. Add tomato and cilantro to bowl along with sea salt. Gently fold to combine.

6. Using remaining lime, adjust juice and salt to taste. Serve immediately.

7. Add pits back into the guacamole to store and prevent oxidation.
