Turkey and Bacon Roll Ups with Avocado and Carrots

Ingredients

2 avocados 2 carrots 8 ounces bacon 8 ounces sliced turkey 8 gluten free tortillas

Instructions

1. Peel, pit, and thinly slice avocado. Peel and shred carrots.

2. Cook bacon in a large heavy bottomed skillet over medium high heat until crispy. Remove to a paper towel to drain.

3. Pour bacon fat into a clean mason jar through a fine mesh strainer to save for cooking later.

4. Lay out the tortillas. In each tortilla, place an equal amount of turkey.

5. Top turkey with bacon, a few slivers of avocado, and a sprinkling of shredded carrots.

6. Roll each tortilla around the filling with the seam side down. Slice each roll in 3 pieces and serve.
