Turkey Blueberry Basil Breakfast Sausage

Ingredients

1 ½ pounds ground turkey 2 teaspoons sea salt, or to taste ¼ teaspoon ground black pepper ¾ teaspoon ground thyme 1 teaspoon dried basil 2 tablespoons pure maple syrup, more for serving ¾ cup frozen blueberries avocado oil, as needed for cooking

Instructions

1. Place ground turkey in a large bowl.

2. Add all spices and maple syrup. Gently but thoroughly combine, using hands.

3. Fold in blueberries, again using hands, until they are incorporated.

4. Heat a large cast iron or nonstick skillet over medium-low to medium heat. Add a little avocado oil to the pan.

5. Take a small pinch of sausage mixture and form a mini patty. Cook patty for a couple minutes on each side, until internal temperature reaches 165F.

6. Take skillet off the heat and remove patty. Let cool for a minute. Taste and see if the seasoning is to your liking. If not, adjust seasoning as needed.

7. Once seasoned to your liking, form into patties. This recipe will make 3-4 sausage patties per serving.

8. Heat skillet again over medium-low to medium heat and add more oil if needed.

9. Cook patties 4-6 minutes per side depending on size. Thicker patties may take longer. Lower heat a bit if they are browning too quickly.

10. Sausage patties should be golden brown with an internal temperature of 165F.

11. Remove to a plate and serve with extra maple syrup on the side, if desired.
