Veggie 'Mac'

Ingredients

1 cup quinoa 1 cup chicken broth, or beef broth 1 onion ¼ cup sun-dried tomatoes 1 bunch spinach 8 ounces bacon 2 teaspoons minced garlic ¼ teaspoon sea salt, to taste ¼ teaspoon ground black pepper, to taste ⅛ teaspoon red chili flakes, optional

Instructions

1. In a large mixing bowl, cover quinoa with filtered water and soak overnight (ok to soak till dinner time).

2. Before cooking, drain quinoa and rinse until water runs clean.

3. In a large sauce pan, cook soaked quinoa in chicken or beef broth.

4. Peel and chop onion. Finely chop sun-dried tomatoes. Wash and finely chop spinach. Chop bacon into 1/4 inch pieces.

5. Sauté bacon in pan just until not quite crispy. Drain all but about 3 tablespoons bacon fat. Add onion and garlic and sauté until translucent.

6. Add sun-dried tomatoes. Cover and allow to steam for 1-2 minutes.

7. Mix in cooked quinoa and spinach and continue cooking uncovered just until spinach wilts.

8. Season with salt, pepper, and chili flakes.
