Zucchini Fries

Ingredients

3 zucchinis 1 clove garlic 1 egg 1 teaspoon almond milk sea salt, to taste ground black pepper, to taste 1 teaspoon dried oregano 1 teaspoon dried thyme ΒΌ cup gluten-free breadcrumbs 3 tablespoons extra virgin olive oil

Instructions

1. Preheat oven to 425F. Cut zucchini into fry-like pieces. Crush garlic.

2. Crack egg into a bowl and whisk with milk. Season with salt and pepper, and add the crushed garlic, oregano, and thyme. Mix well.

3. On a separate plate, have your breadcrumbs ready.

4. Grease a large baking tray with 1/3 of the olive oil.

5. Dip the zucchini in the egg, then roll in the breadcrumbs and place on the baking tray.

6. Place the tray in the preheated oven and bake for 15 minutes. Turn the fries 2-3 times during this time, drizzling them with the remaining olive oil.

7. Season with salt and serve.
